Pancakes are a delicious way to start any day.

It's Pancake Day for those who honor Shrove Tuesday (Fat Tuesday, Mardi Gras) as the last day before Lent. In other words a day to indulge, and what better way than with a huge stack of warm pancakes dripping with butter and syrup?

Lent, in some Christian traditions, is a period to give up something cherished as a reminder to turn toward God. And thus Shrove Tuesday, which is a lesser known name for the day before Lent, has come to mean Pancake Day. Load up the plates one last time before the somber and restrained period begins.

Whether you celebrate the season of Lent or not, celebrating pancakes is a joyous occasion for anyone so why not join in the syrupy and buttery revelry? The Stir It Up! bloggers have a number of recipes to help get your griddle hot and your stacks reaching for the kitchen ceiling:

Guyanese pancakes from It Tastes Like Home are almost doughnuts with their deep-fried round shapes and homemade syrup.

Pear and buckwheat pancakes from Sprouted Kitchen have a little more substance for the health-conscious pancake revelers.

Pear and ricotta pancakes from Blue Kitchen kitchen are just simply delicious.

Pumpkin pancakes from Whipped, The Blog are perfect any season of the year.
