Corn and black bean salad

This corn and black bean salad is perfect for outdoor picnics and parties.

Serves 6 to 8

4 ears fresh corn (you can also use 1 bag of frozen, or 1 15-ounce can)

1 15-ounce can of black beans

1 red pepper, chopped

1/3 cup red onion, diced

1 mango, chopped

Juice of two freshly squeezed limes

1 bunch cilantro, finely chopped

Seasoning (use only 1-2 tablespoons)

1 tablespoon garlic salt

1 tablespoon onion powder

1 tablespoon white sugar

2 tablespoons dried oregano

1 teaspoon ground black pepper

1/4 teaspoon dried thyme

1 teaspoon dried basil

1 tablespoon dried parsley

1/4 teaspoon celery salt

2 tablespoons salt

1. Using a sharp knife, cut kernels from cob into a large bowl.

2. Drain and rinse beans, add to corn.

3. Add pepper, mango, and onion. Drizzle in lime juice.

3. Chop cilantro finely using a food processor. Add to bowl and combine well.

4. In a separate bowl combine seasoning, then add 1 to 2 tablespoons to corn and black bean mixture, stir. Add more seasoning, to taste.
