Chipotle crusted salmon with triple berry sauce

Grilled salmon is for many a summertime favorite. This recipe offers a unique and delicious take on a classic dish.

Prep time: 10 minutes
 Cook time: 15 minutes
 Yield: 4 servings

Ingredients:

2 tablespoons brown sugar

3/4 to 1 teaspoons chipotle chile powder

1/2 teaspoon ground cumin

1/4 teaspoon saltCrisco® Original No-Stick Cooking Spray

4 (4 to 5 oz.) salmon fillets with skin on

1/3 cup Smucker's® Orchard's Finest® Northwest Triple Berry Preserves

1/2 teaspoon fresh lime juice

1 tablespoon finely grated lime peel

Directions:

  1. SPRAY cool grill grates with no-stick cooking spray. Heat grill to medium. Blend brown sugar, chipotle powder, cumin and salt. Coat the skin side of the fish with no-stick cooking spray. Spread rub mixture onto top of fish (not skin side).
  2. COOK fillets skin side down on grate. Grill fish 12 to 15 minutes or until opaque throughout
  3. COMBINE preserves with lime juice in a microwave-safe bowl. Microwave 15-20 seconds on HIGH. Drizzle over salmon. Garnish generously with grated lime peel.
