Vegetarian, vegan, or gluten-free? Six new cookbooks.

More people are looking for new ways of cooking with fruits, vegetables, "superfoods," and alternatives to meat, whether they are aiming to be vegetarian, vegan, or gluten-free. Here is a sampling of 2014 cookbooks to guide home cooks toward fresh ideas in the kitchen.

It's been nearly two decades since Deborah Madison introduced her "Vegetarian Cooking for Everyone." This updated volume takes into account new practices and culinary preferences that have evolved in vegetable-based cooking since then. "We were not eating kale salads at all during the seven years when I was writing 'Vegetarian Cooking for Everyone;' now they're everywhere," Madison writes in the introduction.

Some recipes have been deleted but there are more than 200 new ones. Madison remains at the forefront of vegetarian cooking, even though she now considers herself an omnivore with an emphasis on local foods. Her experience as a cooking instructor, chef, and pioneer of the Slow Food movement means a wealth of knowledge in "The New Vegetarian Cooking for Everyone" awaits any budding or a well-seasoned cook (pun intended) looking for fresh inspiration.
